Gluten Free, Dairy Free, Vegan "Cheesy" Sauce.
The weather yesterday was much like todays, a little bit cold and loads of glorious rain! It was the perfect excuse for a cosy, lazy arse day on the couch watching movies and eating comfort food. Ella and I really wanted something for lunch that involved pastry but all of the gluten free pastry available in the shops is pretty ordinary (not to mention full of less than ideal ingredients) and I couldn’t be bothered making any! Cue a delicious bowl of gluten free, dairy free and vegan “cheesy” pasta.
Although I stirred the sauce through some brown rice penne pasta yesterday, I usually use this sauce with lasagne and it also works beautifully with scalloped potatoes. I make this sauce in my Thermomix but it can also be made on the stove top and I've included both instructions. I haven’t tried it but I reckon the nuts and water could be replaced with 600 grams of rice milk to make it nut free. Enjoy! Xx
Gluten Free, Dairy Free, Vegan “Cheesy” Sauce.
50 grams of cashews 50 grams of macadamia nuts 500 grams of water ½ tsp of garlic powder 1 tsp of onion powder 1 tsp of salt 1 tsp of rapadura sugar (optional) 2 tsp of apple cider vinegar 20 grams of nutritional yeast 30 grams of tapioca starch
Thermomix instructions:
Add cashews, macadamias and water to bowl and blend for 1 min speed 9. Add the rest of the ingredients and cook for 5 minutes, 90 degrees, speed 4.
Stove top instructions:
Add cashews, macadamias and water to a blender and blend until smooth. Add the rest of the ingredients to the blender and blend until combined. Pour into a saucepan and stir over a medium heat until thickened.
Nutritional yeast can be found at health food shops and some supermarkets. Woolworths and Coles now stock it. For those that require a brand of nutritional yeast that is free of added folic acid, Ceres Organic Savoury Yeast Flakes does not contain added folic acid or other vitamins.
